DRY FRUITS BAR

Have you ever made homemade energy bars? I did for the first time few months ago & they turned up just perfect.They were delicious and yummy. Easy to make, soft and chewy.You may have many of the ingredients to make these granola bars already in your kitchen shlevs. It’s a simple blend of dry fruits, seeds and nuts. These homemade chewy bars are easily customized to taste with your own favorite fruits and nuts.

 Here is my home made energy bars loaded with Dry Fruits, Seeds & Nuts ....

INGREDIENTS & QUANTITIES:  All desired & available DFSN

Dry Ingredients

¼ cup of cashew
¼ cup of walnuts
¼ cup of almonds
¼ cup of pistachio
¼ cup of peanuts
¼ cup of hazel nuts
¼ cup of raisins
¼ cup of pumpkin seeds
¼ cup of melon seeds
¼ cup of sesame seeds
¼ cup of brown sugar
1 TBSP of flax seeds
1 TBSP of chia seeds
1 tea spoon of cinnamon powder
2 TBSP of quinoa

1 cup of oats

Wet Ingredients

¼ cup of unsalted butter
¼ cup of honey
1 TBSP of vanilla extract
Preheat the oven at 160˚C for 20 minutes.

Preparation

Roast all the dry fruits, seeds n seeds. Put them in a food processor to get crushed.
Now put them in a large bowl, add melted butter, honey, brown, sugar, vanilla extract & cinnamon powder. Combine all the ingredients gently. Grease the pan with butter & line it with parchment paper. Transfer the mixture from the bowl to baking pan. Press & spread the mixture in to the pan with hand or spoon or with the bottom of the small bowl. Bake it for 30-35minutes at 160˚C, after 30 minutes take it out let it cool completely.
(Cut it into desired shapes & sizes. Refrigerate for two hours or until chilled.)

Ingredients can be as per your choice. You can add or eliminate the ingredients according to your taste n availability. For extra flavor try dried rose petals, lemon zest, orange zest or desiccated coconut.

Temperature & cooking time may vary because ovens vary in power and efficiency.

Cooled Melon Malibu Drink

Summer is here and who does not love to taste the chilled juice n drinks. We have plenty of fruits and cold drinks to quench the summer thrist. Sharing my favourite cocktail drink to chill & relax. 

Ingrediants & Directions 

2 glass of  home made water melon juice
50 ml of Malibu rum 
Fresh mint leaves
Fresh ginger
1/2 lemon

Salt to taste

Let's get started 


Diced the  red melon with out seeds, pour it in the mixing juice jar,add malibu rum, mint leaves grated ginger,lemon & salt acoording to your taste. Give a nice blend to make juice. Take a desired shape of glass , apply lemon to edges of the glass, flip the glass upside down to plate which has salt. Glass is ready to be poured with melon juices . Fill the glass with  cocktail juice  n ice cubes. Are you ready to relax & taste the sip of chilled melon cocktail drink ?

Yummy & healthy Wheat flour cookies

This is one of the easiest cookies you will ever make. It is made with the goodness of whole wheat flour. When the cookies are baked it gives a nice crispy crust and a soft interior.Hope you will give this a try and let me know how it turns out for you..

Ingredients & Ratio:

Dry Ingredients
1 cup wheat flour                                                     
½ cup oats (dry roasted & in powdered form)
¼ cup almonds,1/4 cup cashew (in powdered form)
¾ cup brown sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt

Wet Ingredients

1 egg
1 Tablespoon vanilla extract
3 Tablespoon honey
20 ml milk (if required)
40 ml melted butter
Choco chips for decoration 

Preparation

In a large bowl combine all the dry ingredients. Add wet ingredients to it. Mix the mixture till it turns into smooth and soft dough. Divide the dough into two portion. Keep the cookie dough in a covered bowl and refrigerate it for 25-30 minutes. Roll the dough into smooth flat rounds. Cut the cookies in desired shapes. Bake it in the preheated oven for 12-15 minutes or till the cookies turn in light golden.


NOTE: Rolling takes an effort to flatten the dough. You can add edible gel colors to the dough for baking colorful cookies.

Almond Peanut Butter

I always thought that making peanut butter at home is hard and not a easy task,but i proved my self wrong. But ohh God ,it's super duper easy. It's the easiest and fastest recipe to make at home with very few ingredients. It's healthy,delicious and full of vitamins and minerals and a protein rich spread. Peanuts are low in carb and high in fats.

The health benefits of almonds are innumerable . Its a highly neutritional nuts and an ideal source of protein. Almonds may be eaten raw,roasted or soaked. It's a most versatile nut in the whole world. So with all the goodness of peanuts n almonds,let's get started......... Ingredients for making AP Butter...

1 cup roasted peanuts 1/2 cup roasted almonds 1 tsp roasted flax seeds 1 tsp roasted sesame seeds 1/2 tsp salt 1/2 tbsp butter 1-2 tbsp jaggery on any other sweetener Directions 1. Roast the nuts & seeds seperately. Let it cool competely. ( Remove the skin of the peanuts ) 2. Blend or process the peanuts until chopped.Scrape down all the peanut from all sides, again pulse the processor for 2-3 minutes. Keep doing the step until it become thick oily n sticky paste.

3. Now time to add almonds ( better to chunk or powder the almonds before adding ) Run the processer again for 2-3 minute .

4. Add flax, sesame,salt,butter & jaggery. Grind all the ingredients until it becomes smooth.

5. Transfer the butter to a glass jar & store in the refrigerator.

NOTE : * You can bring more twists and creativity by adding chocolate,desired seeds and nuts . * Sweeteners can be of your choices like jaggery,honey,white sugar or brown sugar. * Just doubled the quantity for bountiful amount. ( Better to start with 1 cup measurment ) * Homenade almond peanut butter can be little gritty n coarsed in texture.

COCONUT CINNAMON ROLLS


Coconut cinnamon rolls with vanilla cold glaze are super fluffy and tasty. These rolls are much much better than any store brought rolls. If i can bake these mouth watering rolls , so can you. When they are still worm , it melts in the your mouth leaving an unforgettable taste . I challenged my self by baking these rolls very first time.


INGREDIENTS are very basic.

For dough

3 & half cups All purpose flour + extra for dusting
1 cup warm milk
4 tbsp sugar
2.5 tsp active dry yeast
1 tbsp salt
¼th cup honey
1 egg
¼th cup melted butter

  
For filling

1/4th cup melted butter
1 cup brown sugar
2 and half tbsp. of freshly ground cinnamon powder 
1 cup freshly grated coconut

For glaze

3-4 tbsp of cold vanilla glaze 
2-3 tbsp of warm milk
½ tsp vanilla extract
2-3 tbsp powdered sugar
  
How to prepare

Proof the yeast first. In a bowl add yeast4 tbsp of sugar and 1 cup of warm milk. Stir to dissolve.

1. Prepare the dough. In a large bowl combine flour, proofed yeast, salt and milk. Knead the dough with hands or stand mixer. Add butter, honey and egg. Knead until the dough is soft and sticky. If the dough is too runny and sticky you can add more flour. Transfer the kneaded dough into the greased large bowl, cover it with towel. Place the bowl at warm place like in the oven. Let it rise.

2. Now prepare the filling. In a bowl add sugar, cinnamon powder. Keep ready the grated coconut in another bowl.

3. After first rise the dough should have doubled in size. Remove the towel and transfer the dough on the well- floured or dusted surface of the kitchen counter. Knead the dough with the help of additional flour until it becomes smooth and non- sticky.

4. Roll the dough into a large rectangle shape. Spread the generous amount of melted butter over the rolled dough. Sprinkle the brown sugar and cinnamon powder. Sprinkle the grated coconut on it. Now roll up the dough from down to up and slice them evenly.

5. Place these rolls into greased pan. Cover it with cloth or towel for second rise. 

6. Bake the cinnamon rolls in a preheated oven at 180° C for 25-30 minutes, until golden brown..

7. While the rolls are baking, prepare the glaze. In a bowl add cold glaze, milk, sugar and vanilla extract. Mix it well, adjust the glaze to your requirement. 

8. Remove the cinnamon rolls from the oven. While still warm, pour or drizzle the glaze.

9. Enjoy these warm coconut cinnamon rolls with coffee.

Notes

* Kneading dough helps to develop the flavor and texture of the bread, so kneading is important step. Bread dough  will be sticky. But after first rise it will settle, you can handle it easily. 
* Glaze should be smooth and runny. You can prepare any sort of glaze or icing, it’s totally up to you. I prefer cold vanilla glaze because my girls love to eat with less glaze and icing. 
*Adjust the recipe to your liking and taste.
*I baked in two batches.
My girls asked me to add some chocolate chips on top, so i added some. You can  totally omit this step.
*Fill the rolls with dry fruits, chocolate chips, nuts or any other filling according to your taste.  I personally love coconut filling.
