                                          HAZELNUT ALMOND NUTELLA

My homemade version of hazelnut almond Nutella is not only tasty, but healthy and budget free too, better than store bought. You can make this spread with or without hazelnuts. Smooth and silky in texture, the rich flavor of hazelnuts and almonds makes it mouthwatering and delicious. Once you make this spread at home I bet you will never ever buy it from store.
You can have this Nutella with fruits, pour it on the top of oatmeal bowl, goes well with homemade fresh breads or just eat it with a spoon. I LOVE IT❤️❤️

                                       




INGREDIENTS

Dry roasted hazelnuts 100 gms
Dry roasted almonds 100 gms
3 tsp cocoa powder
¼ th cup of brown sugar
soft chocolate ( 50 gms dark chocolate + 50 gms milk chocolate ) 
pinch of salt

½ tsp vanilla essence
1 Tbs honey
¼ th cup of almond milk 
2-3 Tbs of melted butter

INSTRUCTIONS

                   
          
                     


1. Process dry roasted almonds and hazelnuts until smooth and runny. This will take up to 10 minutes.
2. Add other ingredients into processor and process until smooth. Scrape down once in a while.
3. Taste the spread and adjust the recipe to your liking and taste.
4. Continue processing until the mixture is as smooth as you like.
5. In this recipe am using half portion of dark chocolate & half portion of milk chocolate. You can add the particular type of chocolate which you like to add.
          Nutella is ready!!!

                       


NOTES

It may look runny but the mixture will get thicker as it sets. Store it in air tight container.
                              


Keep it in the fridge so that it can last for up to 1- 2 months.

                                           Oreo Cakey Coconut Blondies











Very simple, one bowl recipe of blondies. Easily customizable with your favorite items. One bowl, number of possibilities of add-ons, want to bake simple or customize…. Just go ahead with your own modifications…. Feel free to make customization to your liking….

All-time favorite & big hit in my house, loaded with Oreo biscuits, flavor of butter scotch Choco chips & loads of butter which makes it soft from inside and gives crunchy top. 

Let’s jump to the ingredients and recipe…




Dry Ingredients

2 cups flour
2/3 cup sugar
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 cup crushed Oreo biscuits
½ cup desiccated coconut
½ cup butter scotch flavored Choco chips

Wet Ingredients

1 cup butter
2 eggs
1 tbsp. vanilla

Instructions







In a large bowl add dry ingredients, mix well and set aside.

Add wet ingredients to the dry ingredients.


Combine everything well.



Grease the pan, pour the batter into the pan, spread it out evenly.



Bake at 180℃ for 20-25 minutes. Bake until center is set.








Allow to cool and cut into pieces.

Red tomato sauce for lasagna

                                               🍅 Red tomato sauce for Lasagna 🍅


Fresh tomatoes, onion, few garlics, combination of sugar and salt & a few more simple ingredients and that’s it. Very delicious and made with the goodness of fresh ingredients & seasonings. You can keep this tomato sauce in the fridge for one week. Nothing can beat this homemade fresh tomato sauce. It’s the base for many delicious and wonderful dishes. If you want to turn this sauce into meat sauce, simply add chicken or meat into this.

I use tomato sauce in many of my recipes. In India, its common to use red sauce in many dishes. Feel free to use your choice of spices & dry herbs. It’s a super quick recipe, easy to make, and you will be happy with the results☺️☺️ Either you can make a chunky tomato sauce or the smooth one. Optional herbs, chili flakes or seasonings can be added to make in your own way. 

 Ingredients & quantity to make this sauce 


5-6 Large tomatoes 
3-4 tbsp tomato puree
1 Large onion
5-6 Garlic
2 Bay leaves
1 tbsp salt
1 tbsp sugar
1 tbsp Italian seasoning
1 tbsp black pepper &
2-3 tbsp olive oil

Instructions to make this sauce

1. Chop the tomatoes, onions and garlic. In a heavy sauce pan add 2-3 tablespoon of olive oil.  Add chopped onions.
2. Sauté until translucent or soft in texture. Add chopped garlics. Again, sauté until fragrant. Be careful here, we don’t want to burn garlic.





3. Add tomato puree and chopped tomatoes. You can also use canned chopped tomatoes.

4. Combine everything well, cover the sauce pan with lid and cook until soft and juicy.
5. Add dry seasonings along with pepper, salt and sugar. You can add chili flakes too for more spice.

6. Add bay leaf too, for more flavor. If sauce gets thick, add little water. Simmer about 5-10 minutes or until all the flavors come together.
7. Remove the bay leaf, once the sauce is done.

NOTES

Customize this sauce according to your taste and liking.
If you like smoother sauce, then just puree it in a blender.
You can also use canned tomatoes if you are in a hurry.
You can make in a large quantity and store it in a fridge for later use.
This delicious sauce goes perfect with pastas, lasagna, spaghetti etc.
Use herbs and spices according to your taste.
It’s always better to use fresh ingredients for more taste and flavor.

                                   How to make Béchamel Sauce






A rich white sauce made with milk infused with herbs and other flavorings, is called Béchamel sauce. This French sauce is made from simple and common ingredients like butter, milk, flour, salt & few spices & that’s it.  Such a basic recipe for, that you can use for variety of different dishes. An easy recipe with fresh & tasty ingredients, which doesn’t take too much time.  The sauce goes perfectly well with pastas, macaroni and grilled vegetables.

There are few rules to keep in mind to make perfect sauce. Rule number 1 to avoid mishaps in the kitchen is use equal parts of butter and flour to make the Roux. The second rule is that the roux needs to be cooked for a few minutes, otherwise the sauce will give the uncooked flavor. As you all know ‘slow and steady wins the race’, exactly this is the third & most important rule. Keep the heat low and slowly make the sauce. The fourth rule of Béchamel is constant stirring. The more you stir, more you get the fine & smooth sauce. And you are ready to go!!!

So here is my way of making, One of the versatile and essential Sause “Béchamel sauce”. I just love ❤️ the word: bay/shah/mehl.




Ingredients

60 gms butter
60 gms flour
600 ml hot milk
1 teaspoon salt
¼ teaspoon grinded black or white pepper
1 bay leaf
pinch of nutmeg










Divine Béchamel sauce


Preparation

Melt the butter in a heavy bottomed sauce pan, add flour. 

Constantly stir the butter & flour mixture, but don’t let it brown. 

Whisk until smooth, then slightly pour milk little by little. Do not add all the milk in one go as it may become lumpy. 

Continue to stir as the sauce get thicken. 


Add pepper, salt, pinch of nutmeg and bay leaf. Bring it to a boil. 

Remove from the heat. Also, remove the bay leaf after the flavors have infused.

 Cool this sauce for later use.


What is roux?

Roux

 A hot mixture of equal amount of butter & flour is roux. Roux is  made by melting butter & flour, cook together in to a smooth paste without any lumps. It is used as a thickening agent in the formation of sauces and soups. 


How to use Béchamel sauce?

This sauce is a mother Sause for many creamy recipes. Well goes with lasagna, baked vegetables, pastas and macaroni. 


Recipe notes

Keep the flame low from starting to the end.

You can turn this white sauce recipe into a pasta or cheese sauce by adding cheese.

You can add an onion studded with cloves to this sauce along with other spice while boiling. Remove the bay leaf and onion studded cloves from the sauce once is done.

Milk should be enough warm before adding it to the hot roux. Warm milk helps to prevent lumps from forming.

DRY FRUITS BAR

Have you ever made homemade energy bars? I did for the first time few months ago & they turned up just perfect.They were delicious and yummy. Easy to make, soft and chewy.You may have many of the ingredients to make these granola bars already in your kitchen shlevs. It’s a simple blend of dry fruits, seeds and nuts. These homemade chewy bars are easily customized to taste with your own favorite fruits and nuts.

 Here is my home made energy bars loaded with Dry Fruits, Seeds & Nuts ....

INGREDIENTS & QUANTITIES:  All desired & available DFSN

Dry Ingredients

¼ cup of cashew
¼ cup of walnuts
¼ cup of almonds
¼ cup of pistachio
¼ cup of peanuts
¼ cup of hazel nuts
¼ cup of raisins
¼ cup of pumpkin seeds
¼ cup of melon seeds
¼ cup of sesame seeds
¼ cup of brown sugar
1 TBSP of flax seeds
1 TBSP of chia seeds
1 tea spoon of cinnamon powder
2 TBSP of quinoa

1 cup of oats

Wet Ingredients

¼ cup of unsalted butter
¼ cup of honey
1 TBSP of vanilla extract
Preheat the oven at 160˚C for 20 minutes.

Preparation

Roast all the dry fruits, seeds n seeds. Put them in a food processor to get crushed.
Now put them in a large bowl, add melted butter, honey, brown, sugar, vanilla extract & cinnamon powder. Combine all the ingredients gently. Grease the pan with butter & line it with parchment paper. Transfer the mixture from the bowl to baking pan. Press & spread the mixture in to the pan with hand or spoon or with the bottom of the small bowl. Bake it for 30-35minutes at 160˚C, after 30 minutes take it out let it cool completely.
(Cut it into desired shapes & sizes. Refrigerate for two hours or until chilled.)

Ingredients can be as per your choice. You can add or eliminate the ingredients according to your taste n availability. For extra flavor try dried rose petals, lemon zest, orange zest or desiccated coconut.

Temperature & cooking time may vary because ovens vary in power and efficiency.

Cooled Melon Malibu Drink

Summer is here and who does not love to taste the chilled juice n drinks. We have plenty of fruits and cold drinks to quench the summer thrist. Sharing my favourite cocktail drink to chill & relax. 

Ingrediants & Directions 

2 glass of  home made water melon juice
50 ml of Malibu rum 
Fresh mint leaves
Fresh ginger
1/2 lemon

Salt to taste

Let's get started 


Diced the  red melon with out seeds, pour it in the mixing juice jar,add malibu rum, mint leaves grated ginger,lemon & salt acoording to your taste. Give a nice blend to make juice. Take a desired shape of glass , apply lemon to edges of the glass, flip the glass upside down to plate which has salt. Glass is ready to be poured with melon juices . Fill the glass with  cocktail juice  n ice cubes. Are you ready to relax & taste the sip of chilled melon cocktail drink ?

Yummy & healthy Wheat flour cookies

This is one of the easiest cookies you will ever make. It is made with the goodness of whole wheat flour. When the cookies are baked it gives a nice crispy crust and a soft interior.Hope you will give this a try and let me know how it turns out for you..

Ingredients & Ratio:

Dry Ingredients
1 cup wheat flour                                                     
½ cup oats (dry roasted & in powdered form)
¼ cup almonds,1/4 cup cashew (in powdered form)
¾ cup brown sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt

Wet Ingredients

1 egg
1 Tablespoon vanilla extract
3 Tablespoon honey
20 ml milk (if required)
40 ml melted butter
Choco chips for decoration 

Preparation

In a large bowl combine all the dry ingredients. Add wet ingredients to it. Mix the mixture till it turns into smooth and soft dough. Divide the dough into two portion. Keep the cookie dough in a covered bowl and refrigerate it for 25-30 minutes. Roll the dough into smooth flat rounds. Cut the cookies in desired shapes. Bake it in the preheated oven for 12-15 minutes or till the cookies turn in light golden.


NOTE: Rolling takes an effort to flatten the dough. You can add edible gel colors to the dough for baking colorful cookies.

Almond Peanut Butter

I always thought that making peanut butter at home is hard and not a easy task,but i proved my self wrong. But ohh God ,it's super duper easy. It's the easiest and fastest recipe to make at home with very few ingredients. It's healthy,delicious and full of vitamins and minerals and a protein rich spread. Peanuts are low in carb and high in fats.

The health benefits of almonds are innumerable . Its a highly neutritional nuts and an ideal source of protein. Almonds may be eaten raw,roasted or soaked. It's a most versatile nut in the whole world. So with all the goodness of peanuts n almonds,let's get started......... Ingredients for making AP Butter...

1 cup roasted peanuts 1/2 cup roasted almonds 1 tsp roasted flax seeds 1 tsp roasted sesame seeds 1/2 tsp salt 1/2 tbsp butter 1-2 tbsp jaggery on any other sweetener Directions 1. Roast the nuts & seeds seperately. Let it cool competely. ( Remove the skin of the peanuts ) 2. Blend or process the peanuts until chopped.Scrape down all the peanut from all sides, again pulse the processor for 2-3 minutes. Keep doing the step until it become thick oily n sticky paste.

3. Now time to add almonds ( better to chunk or powder the almonds before adding ) Run the processer again for 2-3 minute .

4. Add flax, sesame,salt,butter & jaggery. Grind all the ingredients until it becomes smooth.

5. Transfer the butter to a glass jar & store in the refrigerator.

NOTE : * You can bring more twists and creativity by adding chocolate,desired seeds and nuts . * Sweeteners can be of your choices like jaggery,honey,white sugar or brown sugar. * Just doubled the quantity for bountiful amount. ( Better to start with 1 cup measurment ) * Homenade almond peanut butter can be little gritty n coarsed in texture.

COCONUT CINNAMON ROLLS


Coconut cinnamon rolls with vanilla cold glaze are super fluffy and tasty. These rolls are much much better than any store brought rolls. If i can bake these mouth watering rolls , so can you. When they are still worm , it melts in the your mouth leaving an unforgettable taste . I challenged my self by baking these rolls very first time.


INGREDIENTS are very basic.

For dough

3 & half cups All purpose flour + extra for dusting
1 cup warm milk
4 tbsp sugar
2.5 tsp active dry yeast
1 tbsp salt
¼th cup honey
1 egg
¼th cup melted butter

  
For filling

1/4th cup melted butter
1 cup brown sugar
2 and half tbsp. of freshly ground cinnamon powder 
1 cup freshly grated coconut

For glaze

3-4 tbsp of cold vanilla glaze 
2-3 tbsp of warm milk
½ tsp vanilla extract
2-3 tbsp powdered sugar
  
How to prepare

Proof the yeast first. In a bowl add yeast4 tbsp of sugar and 1 cup of warm milk. Stir to dissolve.

1. Prepare the dough. In a large bowl combine flour, proofed yeast, salt and milk. Knead the dough with hands or stand mixer. Add butter, honey and egg. Knead until the dough is soft and sticky. If the dough is too runny and sticky you can add more flour. Transfer the kneaded dough into the greased large bowl, cover it with towel. Place the bowl at warm place like in the oven. Let it rise.

2. Now prepare the filling. In a bowl add sugar, cinnamon powder. Keep ready the grated coconut in another bowl.

3. After first rise the dough should have doubled in size. Remove the towel and transfer the dough on the well- floured or dusted surface of the kitchen counter. Knead the dough with the help of additional flour until it becomes smooth and non- sticky.

4. Roll the dough into a large rectangle shape. Spread the generous amount of melted butter over the rolled dough. Sprinkle the brown sugar and cinnamon powder. Sprinkle the grated coconut on it. Now roll up the dough from down to up and slice them evenly.

5. Place these rolls into greased pan. Cover it with cloth or towel for second rise. 

6. Bake the cinnamon rolls in a preheated oven at 180° C for 25-30 minutes, until golden brown..

7. While the rolls are baking, prepare the glaze. In a bowl add cold glaze, milk, sugar and vanilla extract. Mix it well, adjust the glaze to your requirement. 

8. Remove the cinnamon rolls from the oven. While still warm, pour or drizzle the glaze.

9. Enjoy these warm coconut cinnamon rolls with coffee.

Notes

* Kneading dough helps to develop the flavor and texture of the bread, so kneading is important step. Bread dough  will be sticky. But after first rise it will settle, you can handle it easily. 
* Glaze should be smooth and runny. You can prepare any sort of glaze or icing, it’s totally up to you. I prefer cold vanilla glaze because my girls love to eat with less glaze and icing. 
*Adjust the recipe to your liking and taste.
*I baked in two batches.
My girls asked me to add some chocolate chips on top, so i added some. You can  totally omit this step.
*Fill the rolls with dry fruits, chocolate chips, nuts or any other filling according to your taste.  I personally love coconut filling.

RECIPE OF THE DAY#CAULIFLOWER PIZZA#


                                🍕Cauliflower pizza crust 🍕

Ingredients for Pizza base……Cauliflower, cabbage, zucchini, potatoes, bread crumbs, oregano & salt…

 Other ingredients for topping……Veg toppings of your choice like capsicum, onions, black olives, paneer, cheese cubes, cherry tomatoes, tomato sauce, pizza sauce & oregano leaves……

 can add nonveg toppings also like chicken, salami, kind of sausages…


Let’s prepare the base……Boiled the potatoes and keep aside. Grind the cabbage & cauliflower in food processor. Now steam the cauliflower, cabbage & zucchini. Now squeeze the excess amount of water. Now mix all the boiled ingredients, bread crumbs, oregano,3-4 spoons of grated paneer & pinch of salt. Now grease the pizza pan with parchment paper, spread the mixture & give a nice round shape to it. Bake it at 180 0c for 20 -25 minutes then increase the temperature till 210 0c for another 15 minutes.

Let’s top it with colorful toppings……… If pizza crust is done with light golden brown color, take it out & apply melted butter & pizza sauce, tomato sauce. Top up with veg or nonveg toppings including cheese cubes, cherry tomatoes, capsicum, onions, black olives, grated paneer. Squeeze the spicy tomato sauce.  Again, bake it for 10 - 15 minutes at 180 0c….
